ギーとは澄ましバターの一種で、加熱することによってバターから水分、糖分、蛋白質を取り除いたものです。
インドの古代から伝わる療法、アユールヴェーダによると、ギーはもっとも健康を促進してくれる食品の一つであるとか・・・
ギーはアユールヴェーダの治療やお料理にインドでは幅広く使われています。
また、聖なるもの、縁起がいいものとされ、ギーはインド中で宗教の儀式にも使われます。
英国ではインド料理が非常にポピュラーで、最近ではカレーが人気ナンバーワンのお料理になっているようです。
かくいう私もインド料理の大ファン!
今までに何度も超美味なインド料理をレストランやテーク・アウェイ、また自分でも作って(この場合はそこまで美味しいとは言えませんが・・・)堪能してきました。
勿論、英国ではギーは簡単に手に入ります。
私もロンドン宅のキッチンにギーを常備していたものです。
ということで、私はインドに行く前からギーを使ってはいましたが、インド料理に使うという用途しか知りませんでした。
5年前の話ですが、インド滞在中にホットミルクにギーを少し混ぜて飲むと「ヨガの練習のヘルプになるよ」と勧められましてー。
ギーが関節を滑らかにしてくれるという論理からです。
ゆえに、ヨガのポーズがもっと深くなるという訳です。
なんとなく、頷けるでしょ?
インド滞在中は毎晩ホットミルクにギーを少し混ぜて飲むことが習慣になりましたよ。
それでヨガの練習に何らかの変化があったかって?
答えはノー。
でも、この飲み物、非常に癒してくれるのですよー。
だから毎晩飲み続けていました。
睡眠を促してくれますし・・・
多分、もう少し飲み続けていたらヨガの練習に変化があったのかもしれません。
でも、なかったかもね・・・
とにかく、このギー入りのホットミルクを飲む習慣はとっくの昔に忘れ去られておりましたが、最近そのことを思い出し、めちゃ恋しくなってきたのです。
だけど、残念ながら日本ではギーが簡単に手に入らない!
輸入食料品店でみつけたものは見るからに古そう・・・
埃をかぶっていたし・・・
お料理に使うには全く問題ないのでしょうが、飲み物に使う気がしませんでした。
そうこうしているうちに、直近のアメリカ版「ヨガジャーナル」にギーの作り方が掲載されておりましてー。
やったぁ!
自分でギーが作れるんだぁぁぁ!
読む限り、なかなか簡単に出来そう・・・
高品質の食塩不使用バター(製菓用)、出来ればオーガニックなものが要るだけ。
作り方は超シンプル!
バターをお鍋に入れて火にかけ、糖分や蛋白質が分離されてお鍋の底に沈み、水分が蒸発するまでゆっくり加熱します。
パチパチいう音がしなくなり、金色の液体になればOK。
表面に浮かぶ泡(あく)をスプーンですくって取り除き、布巾をかけた茶漉しで丁寧に漉して清潔な容器に流し込みます。
ギーの出来上がり!
香ばしく、まろやかな味がします。
初めてトライした時は分離した蛋白質を焦がしてしまい、金色ならず、飴色になってしまいました。
味はまあまあでしたが・・・
2度目に成功!
作り方のコツが分かったのでこれからはいつでもギーが作れるわっ:)
言うまでもなく、毎晩のギー入りホット(ソーイ)ミルクの習慣は再開しました。
うま〜。
そうそう、ギーはトーストに塗っても美味しいですよ。
勿論、インド料理を作る時に使えば本格的な味が楽しめます。

It sort of made sense then and I kept up a nightly ritual of drinking hot milk with ghee while I was in

Well, it, at least, helped me to sleep :)
Perhaps, I should have kept up with the routine for much longer to notice the positive difference to my practice…

Anyway, the ritual has been long forgotten until recently…
I’ve started fancying hot milk with ghee again.
Unfortunately, ghee is not widely available in
The ones I found in imported food shops looked, well, ancient… covered with dust and all that…
I guess they are perfectly ok to use in cooking, but I don’t like the idea of using it my drink.
Then I read an article about ghee making in the latest Yoga Journal the other day.
Eureka
I can make my own ghee!
It sounded quite easy to make one – all you need is good quality unsalted butter, preferably organic one.
The method is simple!
You need to simmer the butter in a pot until milk solids are separated from the fat and water from butter is all evaporated.
Skim the foam gathered on the surface.
Once it’s done, pour the ghee through cheesecloth over a tea strainer into clean containers.
Voila!
Beautiful golden liquid is left in the container!
It tastes nutty and comforting.
In my first attempt to make ghee, I ended up burning milk solids, and the ghee turned into dark amber rather than golden… Ugh…
It still tasted ok, though…
My second attempt was successful!
I’ve got the hang of it now, so I can make my own ghee any time :)
As you would expect, I’ve resumed my nightly ritual of hot (soy) milk with ghee.
Yum!
Oh… ghee is very nice spread over a toast and, of course, you can use it for cooking authentic Indian food!

今週火曜日、24日はシュローブ・チューズデー (Shrove Tuesday) (日本語では告解火曜日)又は英国ではパンケーキデーとして良く知られています。
キリスト教徒以外の方はこの日が一体何なのか分からないのでは?
シュローブ・チューズデーとはキリスト教における「レント」が始まる前日に当たります。
この日に伝統的にパンケーキを食べるのでパンケーキデーとして知られているのです。
何故この日にパンケーキを食べるのか不思議に思いませんか?
その訳を説明する前にまず簡単にレントのことをお話いたしましょう。
レントとは日本語で四旬節と呼ばれイースターサンデー(キリストが復活した日)までの40日間(日曜日を除く)、荒れ野でキリストが体験した苦難をまねて信徒たちが断食や娯楽の自粛をするしきたりのことを意味します。
ゆえに、シュローブ・チューズデーは好きな物を食べることと、レントで許されていない食品を使い切る最後のチャンス!
パンケーキはバターや特にレントで禁止されている卵を使いますので、この日にパンケーキが食べられるようになったそうです。
最近では実際断食を行う信徒は僅かで、嗜好するものをレントの間控える、例えば好物をその間口にしないこと等が一般的なようです。
パンケーキを食べる習慣は伝統として現在でも続いています。
ところで、「英国のパンケーキってどんなの?」と思われる方も多いのでは?
小麦粉、卵、ミルクとバターを使って作る薄くて平らなケーキです。
フライパンで焼き上げ、クレープに見た目は似ています。
でも、味は違うな〜
どちらが美味しいかって?
どっちも美味しいけど、英国のパンケーキの方が素朴な味がします。
クレープの方が洗練されているのよね・・・
みなさんも味の違いを試してみて下さいね:)
とにかく、英国では焼きたてのパンケーキにカスターシュガー(非常にきめが細かいお砂糖)をふりかけて、レモン汁を上に絞っていただきます。
簡単に作れるのでこの火曜日に以下のレシピを試して英国の伝統を味わってみてはいかが?
ハッピー・パンケーキデー!
材料
小麦粉110グラム
塩一つまみ
卵2個
ミルク200ミリリットルと水75ミリリットルを混ぜたもの
バター50グラム
作り方
小麦粉と塩をふるいにかけ(空気が良く混ざって生地が軽くなるよう出来るだけ高い位置からふるうこと)、ボールに入れます。
真ん中にくぼみを作り、卵を割り落とします。
フォークか泡だて器を使って良く混ぜ合わせます。
ミルクと水を混ぜたものを少しずつ加えていき、全て混ぜ合わさってスムーズになるまでかき混ぜていきます。
フライパンを火にかけバターを溶かし、まず大匙2杯分をパンケーキの生地に混ぜ合わせ、良く混ざったら、残りを少しずつ加えて良くかき混ぜます。
生地が出来たらそのまま暫く寝かしておきます。
先程のフライパンを火に戻し、熱くなったら中火にします。
パンケーキの生地、大匙2杯分くらいをお玉にすくい、フライパンに流しこんで焼き上げます。
片面が焼けたらひっくり返して両面を焼き上げます。
あつあつにお砂糖をふりかけ、レモン汁をしぼって召し上がれ。
お好みでメイプルシロップや、ジャム、蜂蜜をぬっても美味しいよ〜
Pancake Day!
Next Tuesday, 24th February, is Shrove Tuesday or better known as “Pancake Day” in the
If you are not a Christian, you, no doubt, will wonder what this day is about.
Shrove Tuesday is the last day before the period which Christians call “Lent” begins.
It is known as Pancake Day as pancakes are eaten on this day traditionally.
And your next question will be why pancakes are eaten on this particular day, right?
Well, to explain this you need to know about Lent first.
Lent is the period of forty days (not counting Sundays) leading up to Easter Sunday, and during this time, Christians replicate Christ’s sacrifice and deprivation in the wilderness by fasting, both from food and festivities.
So Shrove Tuesday is the last chance to indulge yourself, and to use up the foods that aren’t allowed in Lent.
Hence, pancakes are eaten on this day as they contain butter and, particularly, eggs which were traditionally forbidden during Lent.
Nowadays only a small number of people actually fast for Lent, and it is more common for believers to surrender a particular vice such as a favourite food.
The tradition of eating pancakes remains, however.
So what does an English pancake look like?
A pancake is a thin and flat cake, made of flour, eggs, milk and butter.
It is cooked in a frying pan and looks very similar to French crepe.
The taste, however, is not quite the same…
I think the English version tastes homely and simple, while its French counterpart tastes, well, more sophisticated…
They are both delicious, though.
You’ve got to try them for yourself to find out the differences:)
Anyhow, an English pancake is traditionally served with a sprinkle of caster sugar (superfine sugar) and a dash of fresh lemon juice over the top.

クリスマスやお正月が遠い過去の話に成り果てた今日この頃。
次のビッグイベント(?) は今週土曜日のバレンタインデーでしょうか?
バレンタインデーは伝統的に「愛」を祝う日。
欧米では恋人同士や夫婦がお互いへの愛の証としてカードやプレゼントを贈り合う日になっています。
他国のことは分かりませんが、イギリスでは男性から女性へのプレゼントとして花束、それも赤いバラの蕾の花束やチョコレート、ランジェリーなど、ロマンティックなものがよく贈られます。
以前勤めていた証券会社では毎年バレンタインデーになると、彼氏や旦那から女性社員へ送られてくる花束で女性用のトイレがお花屋さんのようになっていたものです。
女性から男性に贈られるプレゼントは様々ですが、ちなみに私の場合はチョコが大好物な夫に毎年チョコレートを贈ります。
彼が絶対喜ぶこと間違いなしだからですが・・・
一方日本ではバレンタインデーの本当の意味が失われているようで、どういう訳だか女性から男性へチョコレートを贈る日になっていますよね。
この変な習慣はきっとチョコレート販売の戦略として製菓会社によって昔始められたものなのでしょう。
いずれにしろ、この作戦は大成功!
日本の女性はお目当ての人だけでなく、周りの男性全員 - 家族、友人、知り合い、同僚にまでチョコレートを贈る羽目になっているからです。
いわゆる本命以外へのチョコレート、「義理チョコ」のことです。
一体毎年幾らのお金が義理チョコに費やされているのでしょう?
先日、
会場は盛況で女性でひしめき合った状態・・・
数々のショコラティエが綺麗で美味しそうなチョコレートを並べて買い物客の気を引こうと躍起になっていました。
ディスプレイされていたチョコレートの中には余りに凄いもの(値段もあっと驚きますが・・・)もありましたよ。
誰が買うのかしらん?
それにしてもチョコレートって高いですよね?
その博覧会でのチョコレート1粒の平均価格は500円(3ポンドくらい)にはなるでしょう・・・
ぼったくりと思ったのは私一人でしょうか・・・
とにかく、個人的には義理チョコの習慣を廃止すべきだと思っています!
男性の中にはいくらチョコレートが大好きな方でも食べきれないくらいの数を受け取る方もいらっしゃるそうです。
その上、一般的に男性は余り甘い物を好まれないでしょ?
そうすると、それらの義理チョコの行く末はというと、中には食べられずに捨てられてしまうものもあると聞きました。
信じられない!?
世界中に多くの飢えた人がいるというのに、このような無駄があっていいのでしょうか?
愛情や感謝、またはいずれの理由であれ、相手のことを良く考慮したプレゼントを贈った方がいいと思いませんか?
ただ習慣だからといって義理チョコを贈るのは本当の意味での「贈り物をする」という心に反する気がするのですが・・・
私と同じ思いの同胞が増えますように!
話は変わりますが、日本の男性諸君、今年のバレンタインデーは気になる彼女に花束を贈ってみてはいかがですか?
彼女のハートがとろけること間違いなし:)
St Valentine’s Day – England vs Japan
Christmas and the New Year’s celebrations have become a distant memory.
The next big event (?), I guess, will be St Valentine’s Day which is coming up this Saturday.
St Valentine’s Day is traditionally a day to celebrate love.
In Europe and the
I don’t know about other countries, but in England, the popular St Valentine’s Day gifts from men to women are a bouquet of flowers - mainly buds of red roses, a box of chocolates and lingerie and so on - well, something romantic.
I remember that every St Valentine’s Day, the ladies loo at an investment bank I used to work for turned into something similar to a florist, as partners of female employees sent bouquets of flowers to their loved ones.
The gifts from women to men are more varied, however.
In my case, I always send a box of chocolates to my husband who is a chocoholic of the first degree.
I know he will appreciate it.
Whereas in
I suspect this weird custom was started by confectioners to sell chocolates many years ago.
Their strategies, without any doubt, have been a resounding success!
Japanese females are not only encouraged to send chocolates to their real targeted recipient, but also to any male associates including male family members, friends, acquaintances and colleagues.
These, sort of obliged gifts are called “giri choco” in Japanese and it literally means obliged chocolates.
How many million of yens are spent in giri choco each year, I wonder…?
The other day, I visited a so-called chocolate exhibition organised by one of the large department stores in
It was absolutely packed with heaving female bodies.
There were so many chocolatiers vying for our attentions with beautiful and mouthwatering creations of chocolates.
Some of the chocolates on offer were quite outlandish and they had an outlandish price to match.
I couldn’t believe that the average price for one chocolate sold there was about 500 yen (roughly 3 quid)!
Was it only me who thought it outrageous?
Anyhow, personally I think this silly custom of sending giri choco should be scrapped!
I’ve heard that sometimes one person receives an excess amount of giri choco - more than he can consume even if he is a chocoholic.
Many guys are, however, not so fond of chocolate generally and it is a fact.
So what will happen to these unwanted chocolates?
Well, sometimes they will be thrown away.
Crazy, huh?
There are so many people in the world starving and here in
Don’t you think it is much better to send a well-thought gift as a token of love, gratitude or whatever reasons you may choose?
I can’t help thinking that the sending of giri choco for the sake of sending chocolate as is the custom will lose the true meaning of “giving”.
Hope more of my sisters will think this way.

子供の時、私にとってお豆腐は好きじゃない食べ物の一つでした。
お豆腐料理が献立に登場するたびに嫌々食べたのを憶えています。
ほら、お豆腐ってそれ自体余り味がしないでしょ?
だから美味しいものと思わなかったのかもしれません。
お豆腐の良さを分かっていなかったのですね。
その良さに初めて気が付いたのは7年前・・・
お肉類を食べなくなってからです。
栄養価の高さはさて置き、お豆腐の凄さはいろんな料理にアレンジでき、様々な方法で食べられることです!
言い換えれば、何にでも使えるスグレモノなのです。
今ではお豆腐は私の大好物。
毎日食べても平気です:)
ここでお豆腐を使ったレシピを紹介したいな〜と思います。
このレシピでお豆腐がいかに幅広く使えるかを証明できるんじゃないかしら?
材料 (1〜12人分)
ベース
ダイジェスティブビスケット 350g
マーガリン(溶かしたもの) 175g
フィリング
絹豆腐 1丁
2個分のレモン汁と皮(摩り下ろしたもの)
コーンスターチ 50g
蜂蜜または黒糖シロップ 大さじ3
水 450ml
作り方
- ダイジェスティブビスケットを砕いてボールに入れ、溶かしたマーガリンと混ぜ合わせます。
内側にマーガリン(分量外)を薄く塗った直径20cmのフラン皿にビスケットの混ぜ物を全体的に同じ厚さになるよう押し付けて、ケーキのベースを作り、冷やします。 - 水、蜂蜜または黒糖シロップとコーンスターチを火にかけます。
塊ができないよう良くかき混ぜながら、ゆっくり沸騰させます。
沸騰したら火を弱め、とろみがつくまで煮ます。
- とろみがついたらお豆腐、レモン汁と皮を加えクリーム状になるまで良く混ぜ合わせます。
ケーキのベースに流し込み冷やしたら出来上がり。
このチーズケーキはこのままでも十分美味ですが、ここでは自家製の金柑のシロップ煮を添えてみました。
お好きなフレッシュまたは煮た果物を添えてもOK!
Tofu Lemon Cheese Cake
When I was a kid, tofu was one of my least favourite foods.
Every time tofu appeared on the menu, I was very unenthusiastic and ate it reluctantly.
I found it bland and tasteless, well, little I knew then…
When I gave up meat altogether 7 years ago, I rediscovered tofu and realised its greatness for the first time.
Tofu is great, because, its nutritious value aside, you can cook and eat it in a variety of ways.
In other words, it is very versatile.
Now I absolutely love it and can eat it every day.
Here is a great recipe for tofu – this recipe reaffirms how versatile tofu really is :)
Ingredients - Serves 1 to 12
Base
12oz (350g) digestive biscuits
6 oz (175g) melted margarine
Filling
1 packet silken tofu
juice and rind of 2 lemons
2 oz (50g) cornflour
3 table spoons honey or brown sugar syrup
¾ pint (450ml) water
Method
- To make the base, crumble the biscuits into a bowl, melt the margarine and add to the biscuit crumbs.
Mix and press into a well-greased, 8 inch (20cm) diameter flan tin.
Try not to get a thick welt where the sides meet the base.
Set on one side to cool.
- Put the water, honey or brown sugar syrup and cornflour in a pan.
Heat gradually to boiling point, stirring well to avoid lumps.
When boiling, reduce the heat and allow to thicken.
- Once the mixture has thickened, add the tofu and lemon and blend until creamy.
Pour into the base and chill.
This cheesecake is good as it is, but here I served with homemade cumquat (Chinese orange) in syrup.
You can top the cake with any fresh or cooked fruit of your choice.

彼らのほとんどはいずれ祖国に戻りましたが、そのままインドに住みついた者達も少なからずいたようです。
「ヒッピー・マサラ」はインドに残留した、今は年老いつつあるヒッピー達を追ったドキュメンタリー映画。
昨年私はインド旅行中にこの映画に登場するヒッピーの一人に偶然ハンピで出会いました。
村の小さなレストランでチャイを飲んでいた時、全身黒できめた女性が犬と共にやって来たのです。
その日は非常に蒸し暑く、私なんか、薄いTシャツ姿でしたが、汗ダラダラの状態。
それに対して彼女は黒のトップに長いスカートを着用していたにも拘らず、涼しげで、カッコイイいでたちでした。
映画のことを知らなかった私は「このカリスマ的な人は誰?」と思ったものです。
とにかく、一緒にチャイを飲んでいたドイツ人の女の子が映画に出演していた女性だということに気付き、みんなでお喋りをすることになったのです。
話を聞いてみると、この女性の生き方は非常に興味深いものでした。
シンプルで自然と共存した生活・・・
みなさんは電気がない生活なんて考えられますか?
焚き火でご飯を作ることは?
最初から最後までこの映画を見る機会が残念ながらまだありませんが、YouTubeで見た映像によると、彼女は小さな小屋に住み、洞窟でご飯を炊いていました。
ハタヨガに関する古い教典「ハタヨガ・プラディピカ」で著者スワトマラマはヨギが住むべき理想的な場所として、シンプルで、清潔、実用的で自然な場所を挙げています。
まるで彼女が住む場所のよう・・・
誰にだって多かれ少なかれ逃避願望がありますよね?
忙しい都会の生活から逃れ、スピリチュアルな生き方への憧れ・・・
私だってそうです。
しかしながら、そういった生活を一生続けられるかというと大きなハテナマークです。
便利な現代生活に慣れた者にとって、何もない生活の大変さはもとより、虫や蛇、何が出てくるか分からない場所に住むのも容易ではないでしょう・・・

Last year during my trip to
I was having a chai with others at a small village restaurant, when a lady dressed entirely in black arrived with a dog.
It was a very hot and humid day - I was sweltering in my thin T-shirts, sweating profusely.
The lady, however, looked very cool, both literally and figuratively, in her black top and long skirt.
I didn’t know about the film then, so I just thought “Wow! Who is this charismatic lady?”
One of my fellow travelers, a German girl, recognised her from the film and we started talking.
Her life sounded fascinating – leading a very simple life, living with nature.
Can you imagine a life without electricity?
Cooking all your food over a camp fire?
I haven’t seen the entire film yet, but a little clip I saw on YouTube showed her living in a little hut, cooking her meal in a cave.
In Hatha Yoga Pradipika, an ancient scripture about Hatha Yoga, the author, Swatmarama, described an ideal dwelling for a yogi – a simple, clean, practical and very natural hermitage, well, just like hers.
Most of us possess a sense of escapism to a degree – leaving the busy life in the big city behind and pursue a spiritual life.
I certainly have a longing for it.
Whether I could live like that permanently or not is a huge question mark, though.
Apart from a lack of mod-con, there is a matter of insects to contend with and even worse, snakes and God knows what else…
